Healthy Foods: Cheesy Cauliflower Pizza

This pizza crust tastes exactly like the melted cheese on top of typical pizza, which is the best part, of course. I mean, for me, it's the part I can't stop nibbling on long after I've hit my 2-slice maximum.

This pizza crust is also extremely easy to make. To give a not too graphic example, I am currently under the heavy weight of yet another cold (that's what I get for teaching grade school), and I am also pleasantly full of delicious cauliflower pizza. This whole process took me about 30 minutes from start to finish to plate to mouth, and I even have left overs for lunch tomorrow!



Cauliflower Pizza

Makes 4 mini pizzas

Crust ingredients:
  • 1 cup cauliflower, riced (see below)
  • 1 medium egg 
  • 1 cup low moisture part skim mozzarella cheese, shredded
  • 2 tsp dried basil or other seasonings
Toppings:
  • 1/2 cup pizza sauce
  • 1 roma tomato, sliced
  • 1 cup fresh spinach
  • 2 small crimini mushrooms, sliced
  • 1/4 cup low moisture part skim mozzarella, shredded

Preheat oven to 450ยบ F. Line a baking sheet with parchment paper.

Remove the leaves and core of a full head of cauliflower. Use about 1/3 of the florets, and reserve the rest for later. In a food processor, gently pulse the florets until the cauliflower resembles grainy rice. Alternately, you can use a cheese grater to rice the cauliflower.

In a medium mixing bowl, combine the cauliflower rice, 1 cup of mozzarella cheese, egg, and seasoning. Mix with a broad spoon or spatula to combine.

Spread the mixture evenly on the parchment paper baking sheet. Smooth edges and flatten the surface.
Bake in the oven for 15 minutes or until browned on the edges.


After the crust has pre-baked, spread pizza sauce and other toppings onto it. You can use whatever toppings you like on this. If you're like Caleb and like meat, you might want to throw some pepperoni, sausage or ham onto this melty baby.

Bake the topped pizza for another 5 - 10 minutes, or until the toppings have melted/ browned to your liking.

Allow to cool or gobble up like a fiend, if you're like me and have very little self-control when it comes to melty cheesiness.
